Food News: USDA 2026 Standards

The “Nutritional Modernization” of 2026 is now in full effect. Here is what that looks like on the tray:

  • The 10g Sugar Cap: Flavored milks (chocolate/strawberry) have been reformulated. You may notice they are thinner and less sweet, as they now contain no more than 10g of added sugar per 8oz.

  • Sodium Reduction (Target 2): Schools are currently transitioning to lower sodium levels in breads and cheeses. To maintain flavor, many “Scratch-Made” kitchens are using lemon zest and fresh herbs instead of salt.

  • Milk Variety: The 2026 rollout allows schools to serve Whole and 2% Milk (unflavored) as part of the reimbursable meal, a change aimed at increasing student milk consumption and vitamin D intake.
